I love soup. Even in the hottest part of the Florida summer. This is one of my favorite recipes lately so I wanted to share it.
Lentil and spinach soup 2 cups dried green lentils (rinsed and picked through)
8 cups of vegetable or chicken stock 2 cups of celery, diced small
4 carrots, diced small
1 medium onion, diced small 1 shallot, diced small *optional; if you don't have a shallot, just use more onion.
3 minced garlic cloves
